My girls are obsessed with love Peeps and every time they walk by them in the store, they can’t help but beg for a pack. I mean, how can you not love all those brightly colored chicks and bunny rabbits?! I admit, they don’t get to buy a pack every time they ask, but we did oblige on our last trip to the store and I couldn’t help but do something a little more fun with the Peep Bunnies this year!
I was already making a batch of bright, Spring inspired cupcakes when I got an idea after seeing all of the green Easter grass in the basket… Easter Bunny Cupcakes! These are super easy, can be put together in a pinch with a very small amount of extra ingredients which is a win for any busy Mom!
All you need in addition to your adorable Spring iced cupcakes is a package of Bunny Peeps, Shredded Coconut, Green Food Coloring, and Jelly Beans! We chose to use YumEarth Organics Sour Beans because they’re my girls favorite, but any will do. Although the Sour Beans do look so Easter Egg realistic sitting on top of those cupcakes, don’t they?!
I mixed in a bit of green food coloring with our shredded coconut to get that Easter grass look and then topped the cupcakes with it and a Bunny Peep for perfect and easy Easter Bunny Cupcakes!
No matter where you’re taking these cute little bunnies, they’ll be sure to bring smiles everywhere they hop!
