At some point my daughters became picky eaters. When they were little, they’d eat any and every vegetable that I put in front of them… except for brussels sprouts, those never went over well, although I love them. But they truly would eat just about everything – no matter it’s color. Now? Ha. Apparently when you’re 2, someone whispers to you that green things should be avoided at all costs because that seems to be what happened with both of them! Literally overnight, they both became picky eaters around the age of 2 and we’re still struggling with it at 4.5 and almost 3!
Instead of combatting the issue with a fight at the dinner table every single night, I look for ways to make eating vegetables and all foods a little more fun. My latest challenge came as a I set out to make dinner the other night with a side of Betty Crocker™ Sour Cream & Chives Potatoes… those little green specks of chives that we all know and love as a flavor addition, yeah, to kids it looks like a veggie snuck in!
I had the idea of baking the Potato Casserole in muffin tins rather than a square casserole dish as smaller portions are better for all of us and also more appealing to my girls. But then I started thinking what else could those circular potatoes be!? Before I put them in to bake, I topped with some cheddar cheese to give my potato circles a golden orange because, that’s right, I decided to make them into little golden rays of sunshine! I added some great green grass made of peas, but needed a main character in my little bento-style plate.
My girls are pretty FROZEN obsessed, as is every other little girl in the world, so a snowman only made sense! Made out of a hardboiled egg with a carrot nose, raisin eyes and buttons, and an extra sweet hat – this little plate was the talk of the dinner table!
Now I enjoyed my Betty Crocker™ Sour Cream & Chives Potato Casserole as a lovely circle side dish, but the girls insisted on enjoying theirs as sunshine! I don’t blame them… it did turn out pretty fun and cute!
